It’s strawberry season! My favorite time of the year. This jam couldn’t be easier to make – just blend and stir. Chia seeds are packed with nutrition. They’re high in fiber, protein, the all-important omega-3s, and have been credited with boosting energy, fighting inflammation, aiding digestion, stabilizing blood sugar, and improving heart health. The chia seeds absorb moisture from the blended fruit and become gel-like.
I used about a tablespoon and a half of honey. You can adjust depending on how sweet you want your jam. I also added the chia seeds after blending because I wanted that “seedy” texture. If you want a smooth jam simply blend the seeds with the rest of the ingredients.
2/3 cup chopped rhubarb
2/3 cup sliced strawberries
1/2 tsp. lemon juice
1 – 2 Tbs. raw honey (to taste)
2 Tbs. chia seeds
Blend together the rhubarb, strawberries, lemon juice and honey until smooth. Transfer to a small jar and mix in the chia seeds. Let sit at least 30 minutes. Give it another good stir before serving.
