Who doesn’t love Nutella? Chocolate hazelnutty deliciousness. What it’s not great for is your health. Roasted hazelnuts, skim milk and a hint of cocoa? Try sugar, palm oil and a hint of cocoa. It’s easy to make your own with health-promoting raw cacao, mineral-packed maple syrup, and some added cinnamon to help balance blood sugar.
2 cups hazelnuts, skinned and toasted*
1/2 cup milk (I used homemade almond milk)
1/2 cup raw cacao
1/2 cup maple syrup
1 Tbs. coconut oil
1 tsp. vanilla extract
1 tsp. cinnamon
1/4 tsp. sea salt
Blend everything together in a food processor or high-powered blender until smooth. This will take a few minutes (many minutes) – stay with it, it’s worth it!
Bonus: Stir into some Turmeric-Powered Apple Oats for a decadent chocolate-powered breakfast.
*To skin hazelnuts (thanks to Alice Medrich and Julia Child for this tip!): Bring about 4 cups of water to a boil. Add 4 Tbs. of baking soda (this will make the water foam up so make sure you use a large enough pot) and the hazelnuts. Boil for 3-4 minutes, strain hazelnuts, and run under cold water. Skin each hazelnut, pat dry, and toast at 350° for 15-20 minutes.
