Spring is here! Finally. And I’m feeling like it’s time for a reboot. Luckily, nature gives us exactly what we need season-to-season (think grounding root vegetables in the fall and cooling melon in the summer). Spring is a natural time for cleansing and the bitter greens that come into season this time of year are great to cleanse the body and prepare it for warmer weather.
Dandelion is isn’t just a weed. Not only is it edible, it’s a powerhouse of nutrition. It’s packed with essential vitamins and minerals, helps to cleanse the liver, kidneys, and gallbladder, fights inflammation, and boosts the immune system. You throw it in salads, lightly sauté it with lemon and olive oil, or my favorite – juice it! Sweetened only with apples, my Dandelion Limeade is tart and refreshing!
1 cup dandelion greens
2 medium apples
1/2 cup water
Juice the dandelion greens, apples, lemon and limes. Mix in a half cup of water and sip!
